My favourite is the salmon, bean and pea fishcake bite. I’m partial to fishcakes, but they can be quite heavy with potato. In this recipe, all the potato has been replaced with butter beans, which are a good source of protein and fibre. Two or three of these with a side of salad or veg make a lovely, light meal.
