It’s got to be lasagne with aubergine! Everyone loves a pasta supper, as it’s great for when people come over or you can make a batch and freeze some portions for later. But by switching out traditional lasagne sheets for sliced aubergine, this dish packs in more vegetables and is much lower in calories.
