Yes, you can put lettuce on the BBQ! It’s a great way to eat more vegetables and our grilled lettuce recipe has a subtle cumin and garlic marinade.

Ingredients

  • 2 Romaine lettuce heats (1 romaine lettuce heart per 2 people)
  • 1 tsp cumin
  • 1–2 cloves garlic, finely chopped
  • ½ a lime, juiced
  • 1 tbsp olive oil
  • Freshly ground black pepper, to taste

Method

  1. Slice the lettuce in half, lengthways.
  2. To prepare the marinade, put the ingredients in a large bowl and whisk with a fork to combine.
  3. Place the lettuce in a bowl with the marinade and massage into the lettuce.
  4. Cover and leave in the fridge for at least 30 minutes.
  5. When the BBQ is hot, grill the romaine hearts until lightly browned on all sides, turning every minute or two until done.

Enjoy as a side to some grilled chicken, fish or beans
