Mediterranean cod

A quick and simple dinner inspired by flavours from the Mediterranean

Bring the flavours of the Med into your home with this simple cod. Using sweet potato instead of potato not only adds delicious flavours but also counts towards your 5 A DAY.

Ingredients
  • 400g sweet potatoes, peeled and cut into chunks
  • Spray oil
  • ½ teaspoon chilli powder (to taste)
  • 1 teaspoon paprika
  • 1 teaspoon olive oil
  • 1 onion, sliced
  • 1 red pepper, sliced
  • 1 yellow pepper, sliced
  • 2 small garlic cloves
  • 4–5 small tomatoes, chopped
  • 4 x 120g cod fillets
  • 30g black olives, halved

Method
  1. Preheat the oven to 200°C/Fan 180°C.
  2. Coat the sweet potato chunks in spray oil, chilli powder and paprika. Spread evenly on a baking tray lined with a baking sheet and bake for 30–40 minutes.
  3. Meanwhile, heat the oil in a pan and fry the onions and peppers until soft. Add the garlic and continue to cook for a minute.
  4. Add the tomatoes and cook for another minute. If needed, add a little water, so it doesn't dry out.
  5. Place cod on top, cover pan and cook for about 6–8 minutes or until the fish is cooked.
  6. Finally, add the halved olives and warm through. Divide the cod and sweet potato wedges between 4 plates and serve.
