This vibrant slaw, with a lighter dressing, makes a colourful and healthy alternative to traditional coleslaw.

Ingredients

  • ¼ medium red cabbage
  • ¼ white cabbage
  • 5 radishes
  • 1 yellow pepper
  • ½ sweet red onion
  • 3 carrots, grated
  • For the dressing:
  • 2 tablespoons white wine vinegar
  • 1 teaspoon runny honey
  • 3 tablespoons fat-free Greek yoghurt
  • Handful dill, finely chopped

Method

  1. Finely chop the cabbage, radishes, pepper and red onion.
  2. Place in a large salad bowl and combine with the grated carrots.
  3. Combine the dressing ingredients and drizzle on to the salad.
  4. Mix well and serve.
