If you’re looking for a simple way to flavour a fillet, give this marinade a go. Shop-bought sauces and marinades can be high in sugar and salt, so why not try making your own?

Ingredients

  • 1 large spring onion, finely sliced
  • ½ large mild green chilli, seeds removed and finely sliced
  • ¼ inch cube fresh ginger, finely chopped
  • 1 large garlic clove, finely chopped
  • 1 tablespoon fresh lime juice
  • 1 tablespoon sesame or vegetable oil
  • 1 dessertspoon reduced-salt soy sauce

Method

  1. Combine the ingredients in a bowl.
  2. Pour over two fillets of white meat or fish before grilling.
