This fennel salad is easy to create and goes well with fish or pork, or as a side salad at a BBQ or picnic. It’s so fresh and crunchy with aniseed flavours.

Ingredients

  • 1 fennel, finely sliced
  • 1–2 cloves garlic, chopped
  • ½ a lemon, juiced
  • 2 tbsp olive oil
  • Ground black pepper, to taste

Method

  1. Put the finely sliced fennel and chopped garlic into a bowl and mix.
  2. Add the lemon and leave for a few minutes as this slightly cooks the garlic.
  3. Add the olive oil and ground black pepper and mix together.
  4. Cover with cling film and leave in the fridge for at least 30 minutes before serving. This will ensure that all the flavours are properly infused.
