Ingredients

  • 1 teaspoon olive oil
  • 2 spring onions
  • 3 cloves garlic, finely chopped
  • 5 tomatoes, finely chopped
  • 1 red pepper, finely chopped
  • a few leaves fresh coriander, finely chopped

Extra ingredients for dipping

  • Cucumber, cut into sticks
  • Carrot, cut into sticks
  • Cabbage, cut into slices
  • 2 pitta breads, toasted and sliced

Method

  1. Ask an adult to heat the oil in a pan and add the white part of the spring onion and the garlic. Cook over a low heat for 5 minutes.
  2. Then add the tomatoes and pepper. Cook them for 12 minutes or until they are soft.
  3. Turn off the heat, mash the ingredients gently with a potato masher or the back of a spoon. Then leave the mixture to cool down completely.
  4. Add the coriander and green part of the spring onions and mix well.
  5. Serve in a bowl with vegetable sticks to dip.

TOP TIP

You can also serve your chutney with a flat bread called chapati or use slices of wholemeal pitta bread.
