Ever heard the saying, “an apple a day keeps the doctor away”? Well it’s definitely true that fruit and vegetables are a key part of a healthy diet. When feeding the family, making pudding based on fruit (or vegetable!) is a great way to ensure everyone is on their way to getting their 5 A DAY. And this recipe counts for two!

Ingredients

  • 4 cooking apples, core taken out while keeping the apple whole
  • 90g dried fruit (raisins and sultanas are good options)

5 A DAY: 2

Method

  1. Preheat the oven to 160°C /Fan 140°C.
  2. Line a baking tray with baking paper and put the apples on the tray, holes facing up.
  3. Fill the holes of the apples with the dried fruit.
  4. Then prick the sides of the apples four times with a fork.
  5. Bake for about 25 minutes. Don’t worry that the apple might ooze out of the holes.
  6. Serve each apple with a teaspoonful of low-fat natural yoghurt.
