Ingredients

(serves 2)

  • Around 115g/4oz of any of your favourite fruit, like summer berries, apples or pears
    200g/7oz low-fat natural Greek set yoghurt
    Honey or maple syrup to taste, if required

Method

  1. Wash the fruit and make into a compote if needed.
  2. Place the berries or cold compote into a blender with the yoghurt. Blend until smooth.
  3. Only sweeten the fruit if required. Some fruits may be sweet enough, so always check the taste before automatically adding sugars. This tip goes for all recipes.
  4. Pour from the blender into glass goblets and chill in the fridge for 1 hour.
  5. Serve with a couple of fresh berries.

Top Tip

Soft fruits such as berries can be blended straight into the yoghurt after they are washed. Hard fruits such as apricots, apples and pears are best cooked down to a compote and chilled before blending with the yoghurt.
